Simple Baby Corn Salad

(Makes 4 Servings)

Ingredients

  • 1 can (8 oz.) Geisha┬« Water Chestnuts Sliced, drained
  • 1/2 cup water
  • 1 1/2 cups baby carrots
  • 1 1/2 Tsp.sugar or honey
  • 1/4 Tsp.salt
  • 1 1/2 cups Geisha┬« Whole Baby Corn
  • 1 Tbsp. dijon style mustard
  • 1 Tsp. chopped parsley
  • 2 1/2 Tbsp. olive oil
  • Salt and pepper

Preparation

  1. Bring water to a boil. Add carrots along with sweetener and salt. Cover. Cook for 5-7 minutes. Add baby corn, Water Chestnuts and parsley, cook an additional 5 minutes. Mix mustard, sugar and oil. Salt and pepper to taste.
