Fruit and Pina Colada

(Makes 4 Servings)

Ingredients

  • 1 can (20 oz.) Geisha® Chunk Pineapple,drained
  • To make the fruit salad:1 cantaloupe
  • 2 papayas
  • 10 oz fresh lychees
  • 4 kiwi fruits
  • To make the dressing:1 can (20 oz.) Geisha® Chunk Pineapple
  • 1/3 cup Geisha® Coconut Milk
  • 2 Tbsp.white rum

Preparation

  1. For the Fuit Salad:Peel and slice all of the fruit into bite-size pieces and toss together in a serving bowl.
  2. For the Dressing:Place the Chunk Pineapple in a food processor and process to a puree. Strain through a sieve.
  3. Return to the processor, add the coconut Milk and rum and process until combined. Pour the dressing over the fruit salad and serve.
