Black Bean Shrimp Salad

(Makes 6 Servings)


  • 1 lb Geisha┬« Cooked Shrimp,
  • 1 can Black beans, rinsed & drained
  • 1 Red Pepper, thinly sliced
  • 1 C Celery, thinly sliced
  • 1 C Carrots, thinly sliced
  • 1/4C Picante sauce
  • 2T Cilantro, finely chopped
  • 2T Light olive oil
  • 2T Lime juice
  • 2 c Lettuce; Finely Shredded
  • 2 Roma tomato cut into wedges


  1. In a large bowl combine Geisha cooked shrimp, black beans, red pepper, celery, carrots. In a separate bowl combine: picante sauce, cilantro, olive oil and lime juice and mix well. Pour mixture over shrimp and lightly toss, then regrigerate at least 3 hours, preferably overnight.
  2. Divide mixture and spoon over lettuce and tomatoes on individual salad plates for serving.
